On-the-Run Omelet

On-the-Run Omelet
3 fresh eggs
1 bacon/sausage/cheese packet (prepare ahead of time)
2 tsp. butter
1 can of vegetable oil spray
salt and pepper
Optional: green peppers, chopped onions, sour cream
Pre-cook sausage patties and bacon before going on the road. Put pre-cooked sausage, crumbled bacon and cheese in a resealable bag. Crack fresh eggs into the resealable plastic bag. Close bag. Squeeze and shake until eggs are scrambled. Set aside. Use one foil pan as a liner. Lightly spray the liner with vegetable oil and place it in the other foil pan. Add butter and pour in eggs. I can pour water into my oven around the pans until they begin to lightly float. Close up oven and plug it in. Remove sausage packet from cooler to allow the contents to warm up. Stir after 40 min. of cooking. After 5 to 10 min. open and add in the contents of the sausage packet. Do not add until eggs are firm. Reclose and cook for another 5 to 10 min.
