Chicken and Rice ala Truck
1/2 cup instant brown rice
1/2 cup boiling water
1 cup cooled and diced chicken
or 2 or 3 thighs/legs
1/2 green pepper – diced and sautéed
1/4 cup cream
salt/pepper/garlic to taste
pinch of cayenne or taco seasoning
In 2 qt. bowl pour boiling water over rice and let stand 5 min. Add remaining ingredients, toss to blend and spread in 7″ by 11″ pan. Cover with foil and it is ready to heat in a toaster oven.
